Why do some of my apps turn grey and say waiting when I click onto them?

That means that they haven’t fully downloaded for some reason. Sometimes turning WiFi off, restarting the phone and turning WiFi on again can jump start the download process again. If that doesn’t work try deleting the apps and download them again. Settings>General>iPhone Storage. Let the list of apps load, tap on one of the waiting apps and delete it in the next screen.

As for the phone getting very hot, you should probably take it to an Apple Store and have it looked at. You might want to do that before you even worry about fixing the waiting apps situation.
